Nutty stuffed apricot bites, a gluten free and wheat free recipe, really tasty, enjoy !
Some organic ready to eat dried apricots
50g organic pistachio nuts
50g organic pumpkin seeds
Organic coconut oil
Chop pistachios fairly finely
Chop pumpkin seeds less finely
Bind with some coconut oil until mixture holds together. (Coconut oil is solid at room temperature but becomes fluid when used in cooking or handled)
Find open end of apricot and stuff with mixture.
The amount you make will depend on the size of the apricots.
Try experimenting with other chopped nuts/fruit/seeds as you wish.
