Mushroom Stroganoff Dairy free
- 1 medium red onion, cut into strips
- 2 cloves of garlic, crushed
- 2 tbsp olive oil
- 500g chestnut mushrooms or mixed mushrooms, halved
- 500g soya plain yogurt alternative, eg Alpro
- 1 tbsp creamed horseradish
- Salt and ground black pepper to taste
- Good handful of flat leaf parsley, roughly chopped
How to make mushroom stroganoff
1. Gently sweat the onion and garlic in the olive oil over a gentle heat for 10 minutes until soft but not browned.
2. Add the mushrooms and continue sweating for a further 10 minutes until the mushrooms are just soft.
3. Stir in the plain yoghurt and seasoning. Bring to a gentle simmer and serve.
