Gluten and Lactose Free aubergine and tomato bake
A evening meal for you to enjoy of Gluten and lactose free aubergine and tomato bake. licking my lips !
- 1 large Aubergine
- 1 tin of organic chopped tomatoe
- 1 small red onion
- Lactose free cheese grated (You can also use normal cheese if you're not dairy or lactose free.)
- Dried or fresh mixed herbs.
- Olive oil.
- Salt and Pepper
- Cut the aubergine in half horizontally and slice into semi-circles around 3mm thick.
- Add to a frying pan with olive oil and fry until golden brown. If the oil gets soaked up just add more.
- Add the fried aubergines to a small baking dish.
- Pour the full tin of chopped tomatoes onto the aubergines with the chopped onions.
- Sprinkle on some mixed herbs and add salt and pepper.
- Stir round and add to a hot oven at 180 degrees or Gas Mark 5. Keep in the oven for 15 mins.
- Once cooked add the grated cheese and place back in the oven until the cheese melts or as preferred.
Dish up and enjoy either on it's own or if you want a bit more of a meal, it's great with healthy chips
