Gluten and Dairy Free Fruit and Ginger loaf
A delicious dessert recipe of gluten and dairy free fruit & ginger loaf.

- 6oz-175g of peeled and chopped pear (Use a firm pear, I used comise)
- 3oz -75g dairy/soya free butter
- 8oz -225g gluten free Self Raising flour
- Pinch of bicarbonate of soda
- Pinch of ground cinnamon
- 2-4 teaspoons of ground ginger (adjust to taste)
- 2 beaten med eggs (for egg free -use replacer or 1/4 cup of dairy/soyafree yoghurt per egg) or use Tofu 1/2 cup per egg beaten or whipped.
- 2 large bananas chopped small
- 2oz -50g sultanas
- In a small pan add one tablespoon of water and the chopped pear heat gently on a low heat until soft drain and mash then leave to cool.
- In a medium bowl mix together GF flour,bicarb,cinnamon, and ginger.
- Add beaten eggs to pear mix together.
- Add pear mixture , banana and sultanas to flour mixture and mix together fill a 1x450g (1lb loaf tin).
Cooking Time
- Bake for 1hour -160 deg fan oven or 1hr 5mins-180deg -gas mark 3.
