Festive Sausage Rolls

Festive sausage rolls, an ideal snack recipe for Christmas. !

 

Quick Flaky Pastry:

6 oz butter (frozen for half hour before use)

8 oz plain flour (I used Doves)

1 tspn Xanthan Gum

Pinch of salt

2 table spoons cold water, mixed with 1 beaten egg

Filling:

1lb Your favourite GF sausage meat and mix in

1 Med onion peeled and very finely chopped

(You could add herbs of your choice too)

Preheat oven to Gas 7; 425F, 220C

Put all the dry ingredients into a large mixing bowl.

Take the butter out of the freezer and grate into the flour, keep dipping the butter into the flour as you grate (this makes it easier to grate)

When you are left with a pile of grated butter in the bowl, use a palette knife (NOT your hands) to distribute the butter evenly.

Add the water and egg mixture to make a dough by using your hands, gently bring all the mixture together

Wrap the dough in cling film and chill for 30 mins.

Roll out the flour between two sheets of cling film and make up the sausage rolls to your preferred method and place them on a lightly grease baking sheet/s.

Brush with beaten egg.

Cook on a high shelf for 20 -25 mins.

*These can be frozen uncooked and cooked when needed.
