Delicious gluten free banana lemon loaf recipe, what a delight, enjoy !
1 cup rice flour
1 cup buckwheat flour (or just an extra cup of rice flour if you can't get Buckwheat)
3 tsp baking powder
1/2 tsp salt
1 cup plus 2 tbsp margarine or butter
1 1/4 cups sugar
3 average sized bananas
4 large eggs
4 tbsp icing sugar
1 tbsp lemon juice
Preheat oven to 350oC Sift flours with baking powder and salt.
Beat the butter, sugar and bananas together until smooth and then stir in the eggs, abit at a time to stop it from curdling.
Stir this into the flour mixture until blended.
Pour into a large loaf pan and bake for about 1 - 1 1/4 hours or until a skewer comes out clean and the cake is just firm.
Cool for 10 minutes
Then mix the sugar with the lemon juice and drizzle over the top. (Add more lemon juice to your own taste)
That's all there is to it!
This cake will keep well for several days.
